My friend JoEtte made these for us about 4 years ago had us over for Dinner...and I LOVED the flavor of these YUMMY Chalupa's! They are simmering in my crock-pot..and my mouth is watering just smelling all of those flavors combining.
I used two 3 pound pork roasts...but I like left overs and have a crew to feed.
This is a great Toss in and walk away dinner...as well as a GREAT way to use up those dry beans!
Ingredients:
3 lb Pork Roast
1 lb Dry Black Beans
1 small can diced Green Chili's
1 1/2 TBSP Garlic Salt
1 Tsp Cayenne Pepper
1 TBSP Chili Powder
1 TBSP Cumin
1 chopped onion or 1 TBSP Dehydrated Onion
1 tsp Oregano
1 TBSP Fajita seasoning
Water to cover
Place Roast in Deep Pot on Stove, Or Crock-Pot. Add Beans, seasonings and Chili's and Onion. Cover Roast with water, add water as needed.
Cover and Cook 8 hours, Shred Pork to Serve. Serve with Tortillas or warm Flat Bread, over chips for Nacho's, Garnish with lettuce, salsa, tomatoes , green onions , avocado...The Lime Cilantro Dip is FABULOUS with these~!
*Cilanto-Lime Dressing
2/3 cup Mayo
2/3 cup Sour Cream
3-4 Tables spoon Lime Juice
Handful of chopped Cilantro

Slow Cooker Hot Artichoke and Spinach Dip
Want an EASY finger food that will leave EVERYONE impressed! This is similar to the $8.00 12oz container you can buy at Costco...but so MUCH more bang for the buck..and it is YUUUMMM-YYY! It makes quite a bit so if you are making it for a smaller group do half-sies on this recipe!
2 boxes (9-10 oz)frozen spinach, thawed, squeezed to drain
2 cans (14 oz) quartered artichoke hearts, drained, chopped
1 cup refrigerated Alfredo pasta sauce (from 10-oz container)
1 cup mayonnaise
1 2/2 teaspoon garlic salt
1/2 teaspoon pepper
3-6 (depending on heat preference) chopped Jalapeno's and some of the reserved juices to spice preference
3 cup of FRESH shredded Parmesan cheese (4 oz)
1 loaf (20-inch length) baguette French bread, cut into 40 slices
1. In 1- to 1 1/2-quart slow cooker, mix all ingredients except 2 cups Parmesean cheese & bread.
2. Cover; cook on Low heat setting 2 to 4 hours. Before serving yurn down heat and add remaining Cheese, Serve dip with sliced bread.

Slow Cooker Salsa Chili
This is SOUPER yummy, easy and easy to double or triple and freeze...stick the ingredients in a Freezer bag and WALAH dinner for three nights (or take one to a friend!)
I buy 3 pounds of Hamburger, brown it with one small fresh onion and 2 Tablespoons minced garlic.
1 lb lean (at least 80%) ground beef
1 small onion, chopped (
1/4 cup dehydrate onions
2 cups Pace Picante (or any other salsa) Mild, or HOT
1 can (15 oz) tomato sauce
1 can (4.5 oz) chopped green chiles
1 1/2 Table Spoons chili powder
2 Table Spoons Cumin
pinch of Cayenne pepper (to taste)
3 Table Spoons Garlic Salt
1 can (15 to 16 oz) pinto beans with juice
1 can (15 to 16 oz) kidney beans with juice
Shredded Cheddar cheese, if desired
Sliced green onions, if desired
1. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
2. In 3- to 4-quart slow cooker, mix beef mixture and remaining ingredients.
3. Cover; cook on Low heat setting 8 to 10 hours.
4. Top with cheese and onions.
* For Freezing, I just build one soup in the Crock-Pot, and two more in Gallon Freezer bags set in bowls.
Throw contents in Crock pot, for about the same amount of time....or cook in a Pot if you are in a hurry!

Thai Peanut Sauce Chicken~ Crock-pot



Can't remember what website I found this on...it is EASY and fresh tasting ...and Thai-licious!...I touched it up quite a bit...and my KIDS licked their plates and ate so many seconds, and thirds...there were no leftovers to be seen.

Ingredients:
• 1 package of baby carrots ( skinny fresh green beans are fantastic too)
• 8-10 chicken breasts or tenders, sprinkled with salt and pepper
• 1 tablespoon grated fresh ginger
• Juice and zest of one lime
• 1 finely chopped large garlic clove (about two teaspoons)
• 1 teaspoon curry powder
• 1 teaspoon ground coriander
• 1 can chicken broth
• 1 can unsweetened coconut milk
• 2 cups cooked jasmine, brown or white rice
. 3/4 teaspoon of salt
• 1/2 cup chopped cilantro, for sprinkling on top (optional)
added after crock-pot cooking is almost finished:
3 cups creamy peanut-butter
5 Tablespoons Oyster Sauce (found in Asian cooking aisle)
2 teaspoons soy sauce
1 Tablespoon Chili Powder
1/4 teaspoon salt
Directions:
Place ingredients (except rice) in crock pot in order given. Cook on low heat setting for 8-10 hours.
Next cut chicken in strips, or shred.
Garnish:
Roasted peanuts
Fresh Cilantro
Last put peanut-butter, Oyster Sauce and Soy Sauce in microwave safe bowel...microwave for 30-45 seconds...whisk in remaining ingredients...and then slowly stir into crock-pot mixture....serve with in a half hour!
Serve in bowls with cooked jasmine, brown,white rice or the recipe recommended above. Top with roasted peanuts & cilantro, if desired.
Notes: This is an easy and impressive Thai meal. You will make it again and again.

Shredded BBQ Pork Sandwichs~ EASY (Crock-Pot)

Ingredients:
1 3lb Pork Shoulder Roast
1 40 oz Bottle Sweet Baby Rays BBQ Sauce (Walmart or Costco)
1 1/2 cup Brown Sugar
1/2 cup dehydrated chopped onion
or 1 small chopped white onion
2-3 packages wheat or white hamburger buns
Directions:
Pam Crock-Pot
add ingredients
cook on HIGH for 6-8 hours...
shred and ENJOY!!!!

or 75 Homemade Meatballs*
1 12 oz jar Heinz Chili Sauce (Chili Sauce can be found in the grocery store near the ketchup)
1 can (BIG ONE) of Jellied Cranberry Sauce
1 cup Brown Sugar
1-2 TBsp of garlic Salt (to taste)
* optional - one chopped yellow onion and green pepper ( I think it makes it SO MUCH BETTER)
Directions: Pam Crock-Pot
Toss in ALL ingredients...
COOK for 4-6 hour on low heat
Serve over rice or Egg Noodles

YUMMY!!!! GREAT Ham Leftovers Meal~ Ham and Scallop Potatoes in Crockpot

Crock Pot Ham and Scallop Potatoes
(I double this)
Ingredients:
• 6 cups red potatoes, cut into ½ inch slices
• 2 cups cooked ham, cubed
• 2 teaspoons instant minced onion
• 1 (10 3/4 ounce) can condensed cream of celery soup (or cream soup of your choice)
• 1/2 cup milk
• ¾ cup shredded cheese of your choice
• pepper to your taste ( there is enough salt between the soup and cheese)
Directions
1.
Spray down Crock pot with Pam..or rub down with Olive Oil.
Mix soup and milk, in a small bowl.
2.
Layer 1/3 the soup, 1/2 the ham, ½ potatoes ½ the cheese, ½ th3 onions sprinkled and then repeat for the second layer.
3.
Cover and cook on low heat for 7 to 9 hours or until potatoes are tender.

YUMMY Easy Corn Chowder
What you will need:
2 Cans Potato Soup
1 Can Clam Chowder
1 Can Whole Kennel Corn or I use my flash frozen coen (soooo good)
2 TB sp. Garlic Salt
Pepper to taste.....it really does need pepper
Serve with: Warm French bread
Honey & Butter
Directions: Put all ingredients in big Pot together… add milk until preferred consistency… salt and pepper to taste. Heat slowly as not to burn.
Pot Roast and Veggies
What you will need:
1 Roast (at lest 3lbs.)
3 packets of Brown Gravy (add water accordingly)
3 Red Potato’s
½ cup chopped onion
3 cups baby carrots
1 cup chopped celery
Crock-Pot
Serve with: Sour Dough Bread with Pesto.
Place Roast in Greased Crock pot: Add gravy mixed in water according to packaging…
Wash and cube potatoes
Add rest of veggies….
Cook for 6-8 hours on high.

1lb. Chicken or steak cut in strips
1 small white onion (chopped)
1 handful chopped fresh cilantro
1 teaspoon of cumin
1 red pepper
1 yellow pepper
1 green pepper (all peppers washed seeded and sliced into thin strips)
Juice of fresh limes
Garnish with:
Shredded cheese
Sour Cream
Salsa
To be served with Mexican rice and Pina Colada’s
In skillet pan add two table spoons of oil and brown your meat with onion… add a pinch of salt.
Next follow season packet instructions adding the water and seasoning…add juice of one lime and cumin.
Then add your peppers stir well and cover your pan…. Lowering the temp to medium low….let cook for 5 minutes and check… The filling will be ready when peppers are soft but still crisp slightly when you bite into them.
Have your tortillas warming on a plate inside your oven….
OPTION # 2 ~ Pam Crock-pot add meat, and frozen package of onions and red, green and yellow peppers.
cook on low for 6 hours.
Fill tortillas with mixture…
Add Cheese, sour cream, fresh lime juice and salsa to your liking.

Sweet BBQ Meat Balls or Mozzarella & Spagetti Sauce
Lindsay’s Meatballs ( I double this ...and sometimes freeze in 8x8 pans with sauce)
3 lbs ground beef (lean)
1 12 oz can Evaporated milk
1 cup Oatmeal
1 cup smashed up Saltine crackers (one white stack)
2 Eggs
½ cup onions
2 teaspoons garlic Salt
2 teaspoons Chili Powder
Combine Ingredients, First stirring with a wooden spoon, and then continue to knead ingredients until well combined with oiled hands.
Once mixed well, begin rolling into walnut sized balls and place on wax paper covered cookie sheet. I do two layers and then deep freeze them for about five hours.
Makes about 75. When frozen solid I pop them off the wax paper and
Split them into 3 freezer bags and restore in the freezer.
When ready to cook spray a 9x12 glass pan with Pam and place 25 meat balls inside.
Mix sauce and pour over meat balls.
Bake uncovered at 350 for 1 hour.
Sauce:
2 cups ketchup
1 cup brown sugar
Garlic salt to taste
Or for Spaghetti and Meatballs….
I bake them in Spaghetti Sauce Covered with Mozzarella.
Once baked, I cook the noodles and dish the Sauce and Meatballs on top.
*NOTE* Toss em in the Crck-pot for 3 hours on high...or 5 on low for an EASY PEASY dinner!

3/4 cup brown sugar, packed
1 cup apple juice
1/2 tsp salt
Directions:
Place roast in Pam coated crockpot. Douse roast on all sides with Worcestershire sauce. Press brown sugar on sides and top of roast. Pour apple juice and BBQ sauce into the crock pot but not over roast.. Slow cook on low for 6-8 hours….once it shreds easily off the roast with a fork….turn off Crockpot & allow cooling enough to handle. Meat should pull apart easily. Shred meat and sprinkle with salt. Place meat and sauce in freezer bag or container. For individual servings, spray a muffin tin with non-stick cooking spray. Fill muffin cups with meat and broth. Cover and place pan in freezer just until frozen. Pop out and place in gallon freezer bag. Label and freeze.

Naughty Creamy Italian Chicken
I call this *Naughty Chicken* since a good deal of the recipe calls for Cream Cheese and butter. ~ THIS IS NOT DIET FRIENDLY~
MY KIDS and Hubbie LOVE this it is a fix it and forget about it...or Freeze it and eat it later ...AWESOME for FREEZER meal grouping!!!
Cream Cheese Chicken
4 .7-ounce envelope Italian dressing mix
2 cubes butter
8-10 pounds boneless skinless chicken breast
4 10.75-ounce can cream of chicken soup
4 8-ounce package cream cheese
Turn slow cooker on High. (I ALWAYS PAM my crockpot for easier clean up) Place butter in bottom of slow cooker. When the butter has melted, add one envelope Italian dressing dry mix. Stir into butter until well mixed. Cut chicken breasts into 1" strips. Place in slow cooker and stir to coat with butter and dressing mix. Cover and cook on High for 2-4 hours. Until chicken is mostly cooked.
In a sauce pan on medium heat Put cream of chicken soup and cream cheese. Stir to melt, add other package of Italian dressing and mix well until smooth and creamy. Pour sauce into slow cooker over chicken and turn crock pot on low. Allow to cook one more hour, serve or after an hour turn on warm until dinner time.
For Freezer meals: let Chicken cool in the crock pot:
Then place chicken and sauce into a gallon resealable freezer bags.I use Cup sized portions to measure (so for a Family of Five, five Cups) Label. Freeze.
To serve: Thaw. Heat until piping hot and bubbly.
*Serve over mashed potatoes, rice, or hot buttered noodles.

Bajio Chicken Chile Salad

Ingredients:
5 chicken breasts (I only used 4 large ones)
1/2 cup salsa
1 Tbsp cumin
1/2 cup brown sugar (more to taste)
1 4 oz. can diced green chilies
6 oz. Sprite (1/2 can)
********************************************************************
Combine all ingredients in a crock pot. Cook on low for 5-6 hours. Remove chicken and shred. Return to crock pot and cook 1 more hour. Thicken the juices with a little cornstarch mixed in water.Serve with flour tortillas, lettuce, cheese, black beans and any other taco fixings.If you want it spicier rather than sweeter add a hotter salsa and more green chilies.
