Udi’s Gluten Free Stuffing Recipe

 

 

Ingredients

1 loaf of Udi’s Whole Grain Gluten Free Bread
1 loaf of Udi’s White Sandwich Gluten Free Bread
1/4 cup of fresh flat-leaf parsley
3 tablespoons of fresh sage
Salt
Pepper
1 cup of unsalted butter or margarine
minced Garlic
2 onions (or 1 large onion)
1/2 cup of chopped fennel
1/2 cup of chopped celery
2 large eggs, lightly beaten
1 cup low sodium chicken broth


Directions

Lightly butter each side of Udi's Gluten Free Whole Grain & White Sandwich breads. Broil Udi's Gluten Free Whole Grain & White Sandwich Bread till slightly brown/toasted. Allow bread to cool completely on a wire rack.(we just let a kiddo feel uber helpful and toast the bread two by two. Put bread in a Ziploc bag and slightly break toasted bread into bread crumbs (or cut into pieces). Place in bowl with parsley, sage, salt and pepper. Melt butter in a 12-inch heavy skillet over medium heat; add onions and Garlic and saute until onions are softened. Add fennel and celery, stirring occasionally until vegetables are soft. Transfer vegetables to bowl with the toasted Udi’s gluten free bread crumbs. Add eggs, stock, and gently toss. Transfer mixture to a buttered shallow baking dish. Bake, covered, in middle of oven for 30 minutes at 325 degrees. To brown the stuffing, uncover and bake for an additional 20 minutes.

Gluten Free Jalapeno Artichoke Dip

Jalapeno Artichoke Dip

Ingredients:
2 cans artichoke hearts, (reserve liquid)
2 1/2 jalapenos, minced
1/2 c. mayo
1/2 c. cream cheese
1 c. Parmesan cheese, grated
8 oz. mozzarella cheese, grated
1/2 tsp. Italian seasoning
1/2 tsp. salt
1/2 tsp. red pepper flakes

Directions:
Drain the artichoke hearts, but reserve the liquid.  Roughly chop the artichokes, and then add all ingredients to a large pot over medium low heat. Stir ingredients frequently as they warm to prevent burning. Artichoke liquid may be added as needed to thin out the dip. Once the dip is heated through and the cheese has melted, pour the dip into a preheated slow cooker for serving.

Gluten Free RASBERRY PRETZEL JELLO SALAD

RASBERRY PRETZEL JELLO SALAD
altered and tweaked a little from COOKS.COM

2 c. crushed gluten free pretzels
 3/4 c. melted butter
3 tbsp. sugar
8 oz. cream cheese
1 c. sugar
8 oz. Cool Whip
1 (6 oz.) pkg. strawberry or Raspberry Jello (can use sugar free)
2 c. boiling water
2 (10 oz.) pkgs. frozen Raspberry's, partially thawed
Mix first three ingredients and press in bottom of a 9"x13" pan. Bake at 350 degrees (metal pan) or 325 degrees (glass pan) 8 minutes. Let cool completely. Beat 1 cup sugar and cream cheese. Fold in Cool Whip. Spread over pretzels. Mix Jello and water until dissolved. Add berries. Stir into Jello, then set aside for 10 minutes. Pour over cheese mixture. Chill.

California Cornbread Mix in a Jar recipe

I found this recipe here.

This is a sweet, cake-like corn bread that is delicious with honey butter.

2 cups Bisquick baking mix
1/2 cup cornmeal
1/2 cup granulated sugar
1 tablespoon baking powder

In a large glass or ceramic bowl, stir all the ingredients together. Store in an airtight container/jar.

Attach to jar if giving as a gift:

California Corn Bread

Serves 4 to 6

1 jar California Corn Bread Mix
2 eggs
1 cup milk
1/2 cup butter, melted

Heat the oven to 350 degrees F. Place the cornbread mix in a large mixing bowl and add the eggs, milk and butter. Blend until the mixture is smooth. Poor into a greased 8-inch square baking pan and bake for 30 minutes.

Slow Cooker Hot Artichoke and Spinach Dip



Want an EASY finger food that will leave EVERYONE impressed! This is similar to the $8.00 12oz container you can buy at Costco...but so MUCH more bang for the buck..and it is YUUUMMM-YYY! It makes quite a bit so if you are making it for a smaller group do half-sies on this recipe!

2 boxes (9-10 oz)frozen spinach, thawed, squeezed to drain
2 cans (14 oz) quartered artichoke hearts, drained, chopped
1 cup refrigerated Alfredo pasta sauce (from 10-oz container)
1 cup mayonnaise
1 2/2 teaspoon garlic salt
1/2 teaspoon pepper
3-6 (depending on heat preference) chopped Jalapeno's and some of the reserved juices to spice preference
3 cup of FRESH shredded Parmesan cheese (4 oz)
1 loaf (20-inch length) baguette French bread, cut into 40 slices




1. In 1- to 1 1/2-quart slow cooker, mix all ingredients except 2 cups Parmesean cheese & bread.
2. Cover; cook on Low heat setting 2 to 4 hours. Before serving yurn down heat and add remaining Cheese, Serve dip with sliced bread.

International Crepes~ Always New years Breakfast






Ingredients

* 6 large eggs
* 2 1/4 cup milk
* 1 1/2 cup water
* 3 cup flour
* 1/2 cup Butter flavored Crisco
* Vanilla to taste and 1/2 cup sugar
* Butter, for coating the pan

Directions

In a blender, combine all of the ingredients and pulse for 10 seconds. Place the crepe batter in the refrigerator for 1 hour. This allows the bubbles to subside so the crepes will be less likely to tear during cooking. The batter will keep for up to 48 hours.

Heat a small non-stick pan. Add butter to coat. Pour 1 ounce of batter into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip. Cook for another 10 seconds and remove to the cutting board. Lay them out flat so they can cool. Continue until all batter is gone. After they have cooled you can stack them and store in sealable plastic bags in the refrigerator for several days or in the freezer for up to two months. When using frozen crepes, thaw on a rack before gently peeling apart.

Serve with LOVE....and lots o yummy things inside...here are a couple idea's....

My Moms Cream Cheese Pumpkin Pie/ Original...and SUGAR FREE version

Yep with a diabetic kiddo, on board, we watch our sugar content and try to up the Fiber...but the biggest thing for a type one diabetic (which is VASTLY different than a type 1 diabetic) is CARBS.
So we watch the fatty carbs for Gavin, while I struggle with Sugar, and Yeast...and most processed stuff. Lupus can also cause Irritable Bowl Syndrome...on top of the lovely amount of steroids I have had to take throughout the last ten years .. it bumps up my intolerance for sugar, AKA Insulin resistance.

Soo I end up making A "Original Version"...for the other Nine peps in our fam..but also do a Sugar Free, version for me and my Gav.

Even with the bread we make, I buy a special flour that gives a whopping 5 grams protein per 1/4 cup....

Original Pumpkin Pie
(makes Two Pies

* 2 eggs
* 2 (15 ounce) can pumpkin
* 1/2 teaspoon salt
* 2 teaspoons Pumpkin Pie Spice
* 2 (12 ounce) Sweetened Condensed Milk
* 4 oz (half a block) of Softened Cream Cheese
* 1 -9 inch unbaked pie shell



Directions:

1. Pre-heat oven to 425 degrees.
2. Combine ingredients.
3. Pour into pie crust.
5. Reduce heat to 350 degrees and bake 45 minutes.
6. Cool and garnish with whipped cream.




Sugar Free Pumpkin Pie
(sometimes for a treat I bake this without crust to be extra healthy)

* 2 eggs
* 2 (15 ounce) can pumpkin
* 3/4 cup Splenda granular/ or Tablespoons Stevia
* 1/2 teaspoon salt
* 2 teaspoons Pumpkin Pie Spice
* 2 (12 ounce) can evaporated milk
* 4 oz (half a block) of Softened Cream Cheese
* 1 -9 inch unbaked pie shell



Directions:

1. Pre-heat oven to 425 degrees.
2. Combine ingredients.
3. Pour into pie crust.
5. Reduce heat to 350 degrees and bake 45 minutes.
6. Cool and garnish with whipped cream/ blended with vanilla & Splenda

Cream Puffs or Eclairs






I remember being a little girl, and my Mom making these for catering jobs, for Weddings, Baptisms, baby showers. I remember the Nirvana of licking the beaters.
These are VERY easy to make, the only hard part so not opening the oven to check on them too soon, or your puffs WILL fall! Make sure they are a little brown and crispy on the tops. Before you put in a new batch, make sure the oven reheats up to 425.


Ingredients for Puffs.


* 1/2 cup butter
* 1 cup water
* 1/4 teaspoon salt
* 1 cup all-purpose flour
* 4 eggs

Custard Filling
(and filling and topping)

* 2 (3.5 ounce) packages instant vanilla pudding mix
* 3 cups heavy cream (Instead of milk, but still follow directions on box)

3 cups whipping cream,blend with sugar and added vanilla till peaks form.

One can Chocolate Frosting, and slivered almonds.

Directions

1. Mix together vanilla Cook and Serve pudding mix, cream. Cook as directed. Cover and refrigerate to set.
2. Preheat oven to 425 degrees F (220 degrees C).
3. In a large pot, bring water and butter to a rolling boil. Stir in flour and salt until the mixture forms a ball. Transfer the dough to a large mixing bowl. Using a wooden spoon or stand mixer, beat in the eggs one at a time, mixing well after each. Drop by tablespoonfuls onto an ungreased baking sheet.
4. Bake for 20 to 25 minutes in the preheated oven, until golden brown. Centers should be dry.
5. When the shells are cool,cut the tops off with sharp knife, pull out spongy middle of puff and set aside,use a pastry bag to pipe the pudding into the shells.
1/3 way full. Spoon in fluffy whip cream. Spread chocolate frosting on puff top, sprinkle top with almonds, and put top on puff.

Keep chilled in fridge until serving.

Unfilled puffs, freeze really well.

Stew in a Pumpkin!!! SPPOOOOKKY DIINNER for Hallows Eve!




Well Halloween is on SUNDAY...so the kiddies will be doing all of their fun stuff on Saturday, and that saves some fun family time on Sunday.
I found this recipe a couple years ago and really wanted to try it for Halloween, but usually that day is SO CRAZY ...I haven't done it on the actual day...
This is so Yummy...make sure you scrape the sides as you serve so you get the pumpkin yummieness is with the stew...I think a couple cross-bones bread sticks will make this dinner EXTRA yummy! ...For desert, I probably will do something simple like dirt-with worms cake!

Ingredients

* 2 pounds beef stew meat, cut into 1 inch cubes
* 3 tablespoons vegetable oil, divided
* 1 cup water
* 3 large sweet potatoes, peeled and cubed
* 2 sliced Zucchini
* 4 carrots, sliced
* 1 large green bell pepper, chopped
* 4 cloves garlic, minced
* 1 onion, chopped
* 2 teaspoons salt
* 1/2 teaspoon ground black pepper
* 1 teaspoon Rosemary
* 1 (14.5 ounce) can whole peeled tomatoes, chopped
* 2 tablespoons beef bouillon granules
* 1/2 cup Brown Gravy mix (or more for desired thickness)
* 1 sugar pumpkin or Hubbard Squash (we grew this enormous fella)



Directions

1. Heat 2 tablespoons oil in a large saucepan over medium-high heat. Place beef in the saucepan and cook until evenly brown. Mix in the water, potatoes, carrots, green bell pepper, garlic, onion, salt and pepper. Bring to a boil. Reduce heat and simmer approximately 2 hours.
2. Dissolve the bouillon into the beef mixture. Stir in the tomatoes.
3. Preheat oven to 325 degrees F (165 degrees C).
4. Cut top off the pumpkin and remove seeds and pulp. Place the pumpkin in a heavy baking pan. Fill the pumpkin with the beef mixture. Brush outside of the pumpkin with remaining oil.
5. Bake in the preheated oven 2 hours, or until tender. Serve the stew from the pumpkin, scraping out some of the pumpkin meat with each serving.

Chocolate Zuccini Bread ~ make and FREEZE Muffins!




How FABULOUS is it that my kids think these are "Chocolate Cup Cakes!
I these puppies pack 8 grams of fiber, and because I use "Blue Chief Flour" 5 grams of protein. Now who get's that in an ole' boring "Chocolate Cupcake"?
I don't feel guilty packing these in Gavin's (my son with type 1 diabetes), take to school lunch...and he feels like a ROCK STAR!
I quadruple the recipe and freeze in gallon baggies, they defrost during the morning in the kids lunch boxes.

2 1/2 cups flour
1/2 cup Cocoa
2 1/2 teaspoons Baking Powder
1 1/2 teaspoons Baking Soda
1/2 teaspoons salt
1 teaspoons cinnamon
3/4 cup butted softened
2 cups sugar
3 eggs
1/2 cup milk
2 teaspoons vanilla
2 cups Zucchini grated

Sift together dry ingredients
Cream the butter and sugar, add the eggs and remaining "wet" ingredients.
Stir in dry ingredients.

Batter in two greased pans ...
Bake at 350 F for 1 hour...makes 2 loaves.

CHOCOLATE GLAZE

Ingredients:

* 3/4 cup semisweet chocolate chips
* 3 tablespoons butter
* 1 tablespoon light corn syrup
* 1/4 teaspoon vanilla extract

Directions

1. In a double boiler over hot, but not boiling water, combine chocolate chips, butter and corn syrup. Stir until chips are melted and mixture is smooth, then add vanilla.
2. Dip muffins in warm glaze and swirl in the bowl upside down, place right
side up and allow glaze to dry before storing.

Spinach Strawberry Salad




Spinach Strawberry Salad

This is such a YUMMY fresh, sweet, GREAT salad. One of my ALL time favorites!


The salad has strawberries, spinach and sugar coated walnuts. No set amount – just how you like it. To make the walnuts melt a cube of margarine (works better than butter because it doesn’t burn as easily) on cookie sheet at 400 degrees. Mix in a cup of sugar (I use ¾ because there is always so much left), stir in nuts and bake for 8-10 minutes or until bubbly. Let cool-break up.


Spinach Strawberry Salad Dressing
(Or ....just buy the Light House Poppy Seed Dressing and it works jus' dandy!)


1 ½ C sugar
1 t. salt
2 t. dry mustard
2/3 C vinegar
2 T finely chopped onion

Add above ingredients into blender and blend until sugar dissolves. Pour oil in slow, steady stream on medium speed. Add poppyseeds.

2 cups salad oil
5 ½ t. poppy seeds

Blueberry Filled Lemon Cupcakes w/ Lemon Butter-Cream Frosting




SERIOUSLY Dangerous...but a summer desert...that is GREAT for BBQ's, baby showers, family get togethers...um just for the heck of it!


Cake first:
We are going to Dr. just like we did for the last one! Or...you know,,,just make it the way it says on the box...and add lemon extract....
Use a Vanilla Cake mix, or a White Cake mix (this is what I used in the pic)

Easy White Cake (made into Lemon Cake) thanks to "our best bites" for the idea!

1 box white cake mix
1 cup all-purpose flour
1 cup granulated sugar
3/4 tsp salt
4 egg whites
1 1/3 cups water
2 Tbs vegetable oil
1 cup sour cream
1 tsp vanilla extract (use clear vanilla if you want a pure white cake)
1 tsp lemon extract ( I USE WAY MORE...like 2 teaspoons)

Mix all dry ingredients with a whisk, then add wet ingredients. Beat for two minutes until fluffy.

For cupcakes: fill paper liners 3/4 full and bake according to box directions. Makes 36 cupcakes.

Filling: Simply Fruit Blueberry spread by Smucker's. You can find it near the other jams and jellies and it has big chunks of real fruit and tends to be less sugary than a normal jam. If you do use a jam or jelly (which works great) and want to cut the sweetness a bit, try adding a little fresh lemon juice. I pop it into a food possessor or blender and give it a few whirls...to make it smoother to go through the decorating tip.

Lemon Butter Cream Frosting (QUADRUPLE THIS)

3 T Flour
1/2 C milk (whole milk is best, but I used non-fat when it's all I have and it's actually fine)
1/2 C real butter
1/2 C sugar (that's granulated sugar, not powdered sugar)
2 t lemon extract

* I also added a lil fresh lemon juice to taste.

Whisk together the flour and the milk. Heat in a small sauce pan on medium heat. Whisk continuously until it starts to thicken. I think this is the critical point for any of you who have had problems with this recipe. I have a feeling people are under-cooking this part. Let it cook, while stirring, until it looks like pudding (you should be able to see the bottom of the pan when you stir it). Even though it's thick, you can still it through a mesh strainer (just whisk the mixture in the strainer to push the thick stuff through) and then let it cool completely to room temp. or chill it in the fridge. It needs to be cooled completely. If you don't let it cool completely, it will melt the butter and you'll have runny frosting.

It an electric stand mixer, beat the butter and the sugar for a minute or two until well combined and fluffy. You'll want to use the whisk attachment on a stand mixer, not the flat paddle. Then while beating, add in the thickened milk mixture and the vanilla. Beat on the highest speed you can get to without it spraying all over the place for 7 minutes. Yes, 7 whole minutes, maybe even 8 or 9. I know that seems like a long time, but that's when the magic happens!

You will be scared because it will look like a weird goopy mess at first and you'll wonder what on earth you did wrong. Keep beating and something amazing happens. It goes from that goopy mess to something thick, velvety smooth, and perfectly fluffy.
Use it to fill cupcakes or other pastries, or as a frosting on top. You can't go wrong putting this on just about anything :)



After trouble-shooting with a lot of people, here are some helpful Notes:

1. Use real butter, and a good name-brand. Cheap butter does weird things.

2. If you beat for the 6-8 minutes and the mixture still looks strange, beat longer and at a higher speed if you can. It should come together, but it takes a little patience!

Fill up your cake decorating bag... top with a blueberry and WALAH!!!!

Peanutbutter Filled DevilsChocolate Cupcakes w/ Chocolate Cream Cheese Frosting


Yeah...Seriously..they're naughty....but I made up for them with the Fat-Free Banana Ice Cream Recipe below..Right?

You can use their recipe for the cupcakes, or I am posting the one I used too...

First the Cake Mix:
You can use one good' ole Duncan Hines Devils food cake mix....really, promise...
If ya feel daring try Dr.ing it up with this:
(FYI it increases the standard box yield of 24 up to 36)

1 box devils food cake
3 TB spoons Baking Cocoa
1 cup all-purpose flour
1 cup granulated sugar
3/4 tsp salt
4 egg whites
1 1/3 cups water
2 Tbs vegetable oil
1 cup sour cream
1 tsp almond extract

*Mix em up for about two minutes...

next melt:
1 cup chocolate chips (semi-sweet or milk chocolate)

*I do this in a mug ....start with 1 minute...and then stir...then add 30 seconds, stir...repeat until chocolate is smooth...

Mix the Melted Chocolate into cake batter.
fill paper liners 3/4 full and bake according to box directions.

After baked, and cool pop cupcakes onto cookie sheet and put in freezer, when they are frozen it is easier to fill and frost (this goes for cake decorating too)...


For filling: again these girls say it better than I ever could.

Peanut butter Filling:
I used my Semi-Homemade Peanut-butter Frosting.

Chocolate Cream-Cheese Frosting:

1 Cream Cheese Frosting recipe (or two cans of the store bought stuff ...I promise I won't tell)

or:

2 package 8 oz cream cheese ~ softened
1/2 cup butter ~ softened
3 to 4 Tablespoons milk
2 teaspoon almond extract
2 TBSP Baking Cocoa
8 cups powdered sugar

Cream wet ingredients ….with mixer on slowly add powdered sugar….

Next your gonna repeat what we did with the Cake mix and melt us a cup o chocolate chips....blend it up....and your ready to frost!

I made 50 of these for my hubbies work party ....and they were GONE by the time our family got to the desert table!

Mexican Steak Wrap

• 3 tablespoons cream cheese (or
• sour cream)
• taco seasoning
• ¼ cup brown rice
• 1 tablespoon salsa
• 3 ounces steak, cooked and thinly sliced (or leftover roast beef)
• 1/4 cup red bell pepper, sliced
• Half a handful of green onions
• 1/4 cup cheese, shredded
• chopped fresh cilantro
• romaine lettuce
• Guacamole
• 1 flour tortilla (8-inch size)
Directions
1.
Mix together cream cheese and taco seasoning. Spread on tortilla.
2.
Layer rice, steak, peppers, cilantro, salsa, red pepper and cheese and other ingredients in the middle of the tortilla.
3.
Fold down top and fold up bottom, fold in sides then paste with sauce.

Haitian Flag Day ~Haitian Soup Jumou~

I make this soup every New Years Day for Haitian Independence Day...


I ALWAYS make too much. So I freeze the leftovers for a rainy or snowy day.
Today for Haitian flag day was the perfect day to bust out the Pumpkin Soup...ALL of my kids eat it up!

Here is the history behind the soup:

Pumpkin Soup, a symbol of Haitian Independence and Unity

(Sadly I can't remember which site I cut and pasted this explanation  from:

Every January 1st, most of us around the world are celebrating the New Year's Day. For Haitians though, the first day of the year has added significance, since it doubles as the anniversary of their independence in 1804. On that day, Haitians whether in Haiti or abroad savor pumpkin soup (soup joumou in Kreyol), in keeping with the tradition to celebrate that event. Having this delicious soup on January 1st is rooted deep in Haitians
culture and history. It is a statement.
During slavery, only the French colonists could drink this delicious and aromatic meal on special occasions while slaves were to drink simple bread soup. At the same time, it was a common saying during slavery that "Depi nan Guinen nèg rayi nèg", meaning that Black people have been hating each other ever since they were back in [Guinea] Africa. On January 1st 1804, during the Independence celebration, a huge pot of pumpkin soup was concocted, and every one present was served a bowl to show that we as descendants of slaves could unite and produce something extraordinary.
So every time we drink this soup on January 1st it reminds us of the injustices of slavery and Haitians having overcoming them. It is a declaration that never, as long as this nation exists will they suffer domination under any form, whether physically or ideologically. The one hundred ninety six years of Haitian independence have thus often if not always been one hundred ninety six years of resistance against oppression and domination. Eating pumpkin soup is thus reminding us that the fight is not over. It also gives us courage, for it is a symbol that there is victory for us at the end of the road.

Ingredients: (this how I Lindsay make it every year, (some recipes differ)

1 lb cut stew meat in cubes
1 Tbsp Flour
4 medium Sweet Potatoes peeled and cubed
3 carrots peeled and chopped
½ head of cabbage cut up
1 med chopped white onion
2Tbsp Minced Garlic
2 cups Chicken Broth or @cups water with 8 bouillon cubes
2 cups or one can Libby’s (or any brand) canned unsweetened Pumpkin
¼ tsp. Thyme
Salt to taste






Directions:
In large pot Boil, potatoes half the Onion, and Cabbage in 6 cups of water.
Reserve water after draining Potatoes and other Veggies.
Dip cubed beef in flour and salt mixture (I use garlic salt) …fry beef in heated skillet with garlic and onions, until browned.
Again in Large pot add 3 cups of reserved water, chicken broth, beef and onions, canned pumpkin, and remaining ingredients. Salt to taste.
Simmer on low for up to two hours.
If soup is too thick add extra reserved water as needed.

Also : GLUTEN FREE!!!

4 medium Sweet Potatoes or Yams peeled and cubed
2-3 cups carrots peeled and chopped
½ head of cabbage cut up or 2/3 bag of pre-shredded coleslaw mix
2 med chopped white onion
2Tbsp Minced Garlic or a TON like I put in
2 cups or one can Libby’s (or any brand) canned unsweetened Pumpkin
¼ tsp. Thyme
Salt to taste

Directions:
In large pot Boil, potatoes half the Onion, and Cabbage in 6 cups of water.
Reserve water after draining Potatoes and other Veggies.
Saute Onions in heated skillet with garlic until transparent.
Again in Large pot add 5-6 cups of reserved water, onions, canned pumpkin, and remaining ingredients. Salt to taste.
Simmer on low for up to two hours.
If soup is too thick add extra reserved water as needed.

Hootenannies ~ Blender Pancakes EASY

We make this in a 4.8 Quart Pyrex...you can Imagine why!....
but this recipe is for a 3 Qt. Pyrex dish....served us perfect when we were a six person Family...

Ingredients:
  • 6 Eggs
  • 1 cup Milk
  • 1 cup Flour
  • 1 teaspoon nutmeg
  • pinch of salt
  • Teaspoon Vanilla
  • 3/4 cube butter

Directions:
Preheat oven to 425.
Pam Pyrex and put Pyrex in the oven with butter to melt.

In Blender add eggs, Milk, Flour, nutmeg,Salt & Vanilla until smooth.
Open oven and pour mixture right into glass pan.

Bake for 25-30 minutes...until crust bubbles up and top browns.
Let cool for 3 minutes, pour maple syrup over the top and serve...DELISH!

Chicken Alfredo Ravioli EASY (Double & Freeze)

RECIPE FOR 3 Qt. Pyrex Glass Pan

Ingredients

  • 2 package frozen cheese tortellini (found in Freezer section)
  • 2 cups cup up cooked chicken ( pre-grilled chicken is used here)
  • 2 jars (1 lb.) Ragu ® Cheesy! Roasted Garlic Parmesan Sauce
  • Garlic Salt to Taste
  • 2 cups Mozzarella Cheese
  • Parmesan to Sprinkle

Directions:

In 3-quart saucepan, cook tortellini according to package directions. Drain, and to a 3Qt. Pyrex Glass pan.
Pour Ragu Sauce in and mix in...add garlic salt if desired. Sprinkle with Cheeses...and bake at 350 for 30 minutes....
my kids GOBBLE this up.
* You could also add broccoli florets if you wanted to get a little more green into this dish!

Short Bread

* We make this for Christmas and leave these out for Santa.....
1 ¾cup softened butter
2/3 cup powdered sugar
2 ½ cup Flour
1 cup cornstarch
1 teaspoon Vanilla

1 cookie sheet


Mix all ingredients together in a bowl… mixture will be thick. Spread evenly into cookie sheet. Prick with a fork.
Bake at 375 for 20 minutes… wait until cool, sprinkle with granulated sugar and cut into small rectangles.

Homemade Oreo’s or Ice Cream Sandwiches

What you will Need:
1 Chocolate Cake mix
2 cups cool whip
2 Eggs
1 can vanilla frosting
or vanilla Ice cream
Powdered sugar

Mix together cake mix, cool whip and Eggs. Chill in fridge for two hours.
Then roll dough into small balls… and then roll balls in powdered sugar… Place on greased cookie sheet.
Bake at 350 for 7- 10 minutes
When cool sandwich with vanilla frosting …and place in air tight container…or sandwich with Ice cream … place in air tight container and put in freezer.

Cinnamon Sugar Almonds

Cinnamon Sugar Almonds

What you will Need:
4 cups Raw Whole Almonds
½ cup White Sugar
¼ teaspoon salt
¾ teaspoon cinnamon
1 Egg white
1 teaspoon cold water

Preheat oven to 250’. Lightly grease a metal 10x15 pan.In bowl
Lightly beat egg white; add water, and beat until frothy but not stiff. Add nuts and stir until well coated.
In a cup mix together salt, sugar and cinnamon, and sprinkle over nuts. Toss to coat, and spread evenly on pan.
Bake for one hour in oven, stirring occasionally, until golden…. Allow to cool and store nuts in an air tight container.
