Gluten Free RASBERRY PRETZEL JELLO SALAD

RASBERRY PRETZEL JELLO SALAD
altered and tweaked a little from COOKS.COM

2 c. crushed gluten free pretzels
 3/4 c. melted butter
3 tbsp. sugar
8 oz. cream cheese
1 c. sugar
8 oz. Cool Whip
1 (6 oz.) pkg. strawberry or Raspberry Jello (can use sugar free)
2 c. boiling water
2 (10 oz.) pkgs. frozen Raspberry's, partially thawed
Mix first three ingredients and press in bottom of a 9"x13" pan. Bake at 350 degrees (metal pan) or 325 degrees (glass pan) 8 minutes. Let cool completely. Beat 1 cup sugar and cream cheese. Fold in Cool Whip. Spread over pretzels. Mix Jello and water until dissolved. Add berries. Stir into Jello, then set aside for 10 minutes. Pour over cheese mixture. Chill.

Gluten-Free Meatballs or Meatloaf...

Of course, this is only a template for you to build your own meatballs. Make these once and experiment. Oh, and here’s a hint: This recipe also makes a mighty meatloaf. I altered it from the original resipe
( I tripple and freeze in Gallon baggies)

Ingredients:
1 pound ground pork
1 pound ground beef
2 large eggs
1/2 cup gluten-free finely ground breadcrumbs ( I  used Glutino Crackers smashed well)
2 cloves garlic, finely sliced
2 teaspoons fine-chopped fresh Italian seasonings
1/2 teaspoon fine-chopped fresh thyme
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1/4 teaspoon nutmeg
Juice of 1/2 large lemon
1 teaspoon each kosher salt and cracked black pepper
Directions:
Preparing to cook.
Bring the pork, beef, eggs, and mustard to room temperature.
Mixing the meatballs. Put all the ingredients into a large bowl. Mix them together with your hands. Be careful to not overmix — this is not like creaming butter and sugar together. Instead, fold the ingredients over each other, gently, until they are just combined.
Making the taster. Set a large cast-iron skillet (or sauté pan) over medium-high heat. Add 1 teaspoon of the olive oil. Form a small patty with the meat. Add it to the hot oil. Cook until the patty is firm and browned on both sides, about 2 minutes. Let it rest out of the pan for a moment to cool. Taste. Adjust the seasonings if necessary.
Forming the meatballs. Gently, roll the meat into 2-ounce balls. (These make large meatballs. If you want smaller ones, try 1-ounce meatballs.)
Flash Freeze: On cookie sheet lined with wax paper...for 2 hours, bag in Gallon Baggies (I like 25-30 meatballs per bag)

Crock pot: Spay Crock-pot or rub down with Olive oil, set on low, add meatballs, and your favorite sauce (marinara, Sweet and Sour)...cook on low for 4 hours, serve over Rice, or Noodles. :0)

Pork and Black Bean Chalupas in the Crock-Pot

My friend JoEtte made these for us about 4 years ago had us over for Dinner...and I LOVED the flavor of these YUMMY Chalupa's! They are simmering in my crock-pot..and my mouth is watering just smelling all of those flavors combining.
I used two 3 pound pork roasts...but I like left overs and have a crew to feed.

This is a great Toss in and walk away dinner...as well as a GREAT way to use up those dry beans!

Ingredients:
3 lb Pork Roast
1 lb Dry Black Beans
1 small can diced Green Chili's
1 1/2 TBSP Garlic Salt
1 Tsp Cayenne Pepper
1 TBSP Chili Powder
1 TBSP Cumin
1 chopped onion or 1 TBSP Dehydrated Onion
1 tsp Oregano
1 TBSP Fajita seasoning
Water to cover

Place Roast in Deep Pot on Stove, Or Crock-Pot. Add Beans, seasonings and Chili's and Onion. Cover Roast with water, add water as needed.
Cover and Cook 8 hours, Shred Pork to Serve. Serve with Tortillas or warm Flat Bread, over chips for Nacho's, Garnish with lettuce, salsa, tomatoes , green onions , avocado...The Lime Cilantro Dip is FABULOUS with these~!

*Cilanto-Lime Dressing
2/3 cup Mayo
2/3 cup Sour Cream
3-4 Tables spoon Lime Juice
Handful of chopped Cilantro

Chicken Enchilada Soup

mmm...EASY AND freezable, great SOUP FOR CHILLY DAYS ! We eat A LOT of soup, I mean at *least* once a week while the weather is cold. This soup is si Yummy,AND I LOVE the noodle like quality the Tortillas give to the soup.

Ingredients:





* 1 pound skinless, boneless chicken breast halves
* 1 tablespoon vegetable oil
* 1/2 cup diced onion
* 1 clove garlic, minced
* 1 quart chicken broth
* 1 can whole corn drained
* 1 can black beans drained
* 1 cup enchilada sauce
* 1 teaspoon salt
* 1 teaspoon chili powder
* 1/2 teaspoon ground cumin
* 3 flour Tortilla's cut with Pizza cutter in to strips (like noodles)

Garnish w/ shredded cheese & Sour Cream.

Directions

1. In a large pot over medium heat, cook chicken breasts ( I boil 5 pounds since I more than quadruple this recipe and freeze) in oil until well browned on all sides. Remove and set aside.
2. Cook onion and garlic in remaining oil until onions are translucent. Pour in chicken broth.
3. Pour into pot with remaining enchilada sauce, Corn,beans, salt, chili powder and cumin. Bring to a boil.
4. Shred cooked chicken and add it to the pot. Reduce heat and simmer 30 to 40 minutes, until thickened.
5. Slice Tortilla's (one on top of the other, with a pizza Cutter.
Add the tortilla strips while soup is still boiling and take off heat, stir and let sit for five minutes before serving.
6.Serve with a sprinkling of cheese, dollop of sour cream...tortilla chips, or quesidillas.

Freezer Spagetti Sauce with FRESH tomatoes




Well don't I feel all proud of myself! I didn't grow up with the whole "grow your own stuff and can it" kind of family. Learning how to make bread, opened my eyes to a WHOLE bunch of "No way,I Can't do that's"...that NOW "I SOO CAN DO! "

After taking all of my squash and zucchini out and making 1000 uses of it... freezing most, next came those sad, big and little green tomatoes, that just didn't get enough time in Mr.Sun to turn red...so I stuck them on a big industrialized table in my dinning room, right by a sunny window.... and rotated them daily, and walah my little greenies were blazing red and juicy ready for what ever came next...and to be honest. I had. no . idea. what I really wanted to do with them. I have made salsa, but we prefer Mango Salsa...so THEN...I found this raz-ma-taz recipe..and I thought "here we go"...It was SO EASY..and D-Sang is it GOOD!
Now I have 22 cups of ready made Spaghetti Sauce , chillin' in my freezer!
I added 2 pounds cooked of hamburger, 1 pound of Sausage in onions and Garlic, the last hour of cooking.
I put 6 cups of the cooled finished product in Freezer Bags...and used some with our dinner.
For EXTRA cheesy YUMMO spaghetti, try putting your hot noodles on the plate, followed by a sprinkle of grated mozerella cheese, Spaghetti Sauce, and them another sprinkle of grated fresh Parmesan..just takes boring old spaghetti to a whole other level!


Ingredients

* 4 onions, chopped ( I used one and some dehydrated onions)
* 4 cloves garlic, minced
* 1 green bell pepper, chopped (In used a frozen bag of mixed , green red and yellow)
* 1/2 cup vegetable oil
* 16 cups chopped tomatoes
* 2 tablespoons dried oregano *or instead of all of these use a great Italian seasoning* (like from Costco and do 4 TB spoons) I also used some fresh Rosemary.
* 2 tablespoons dried basil
* 1/4 cup chopped parsley
* 1/4 cup white sugar
* 2 tablespoons Garlic salt
* 3/4 teaspoon ground black pepper


Directions

1. In a slow cooker saute together the onion, garlic, green pepper, and vegetable oil. Cook until onion is transparent.
2. Add the chopped tomatoes, oregano, basil, parsley, sugar, salt, and ground black pepper. Cook for 2 to 3 hours on low heat. Stir frequently.
3. Let sauce cool. Pour sauce into quart size freezer containers. Store in freezer.

Slow Cooker Salsa Chili

This is SOUPER yummy, easy and easy to double or triple and freeze...stick the ingredients in a Freezer bag and WALAH dinner for three nights (or take one to a friend!)
I buy 3 pounds of Hamburger, brown it with one small fresh onion and 2 Tablespoons minced garlic.

1 lb lean (at least 80%) ground beef
1 small onion, chopped (
1/4 cup dehydrate onions
2 cups Pace Picante (or any other salsa) Mild, or HOT
1 can (15 oz) tomato sauce
1 can (4.5 oz) chopped green chiles
1 1/2 Table Spoons chili powder
2 Table Spoons Cumin
pinch of Cayenne pepper (to taste)
3 Table Spoons Garlic Salt
1 can (15 to 16 oz) pinto beans with juice
1 can (15 to 16 oz) kidney beans with juice
Shredded Cheddar cheese, if desired
Sliced green onions, if desired


1. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
2. In 3- to 4-quart slow cooker, mix beef mixture and remaining ingredients.
3. Cover; cook on Low heat setting 8 to 10 hours.
4. Top with cheese and onions.

* For Freezing, I just build one soup in the Crock-Pot, and two more in Gallon Freezer bags set in bowls.
Throw contents in Crock pot, for about the same amount of time....or cook in a Pot if you are in a hurry!
YUMMY with tortilla chips or bread!

Peanutbutter Chocolate Chip Cookies FREEZABLE!!!

Makes:
5 dozen cookies

Packed with great peanut butter taste, these Betty Crocker's Best peanut butter cookies, and they rock my world...I really have to freeze them , or give them away ASAP...or these puppies can very easily become my breakfast , lunch and dinner of choice!
This is also another pack in the lunch snack for my kiddies to take to school!

1 cup granulated sugar
1 cup packed brown sugar
1 cup peanut butter
1/2 cup butter
2 eggs
2 1/2 cups all-purpose flour
1 1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup semi-sweet chocolate chips (or wait until AFTER they are cooked and top with a Hersey's kiss..OR a Reese peanut-butter cup ...YUM!!!!

* Personal note - Sometimes the batter turns out s little dry, and the ingredients don't glue together well enough...I will add a teaspoon or so of veggie oil and it seems to help...I have even done this AFTER the chocolate chips have been added.

1. Mix sugars, peanut butter, shortening, butter and egg in large bowl. Stir in remaining ingredients. ...Stir in Chocolate chips last.
2. Heat oven to 375ºF.
3. Spoon dough into 1 1/4-inch balls. Place about 3 inches apart on ungreased cookie sheet.
4. Bake 9 to 10 minutes or until light golden brown. Cool 5 minutes; remove from cookie sheet. Cool on wire rack. To make the cookies flatter...I will take them out of the oven and DROP the pan from about 12 inches high and it helps them settle;..make sure they are cooled before you take them off the pan.

Chocolate Zuccini Bread ~ make and FREEZE Muffins!




How FABULOUS is it that my kids think these are "Chocolate Cup Cakes!
I these puppies pack 8 grams of fiber, and because I use "Blue Chief Flour" 5 grams of protein. Now who get's that in an ole' boring "Chocolate Cupcake"?
I don't feel guilty packing these in Gavin's (my son with type 1 diabetes), take to school lunch...and he feels like a ROCK STAR!
I quadruple the recipe and freeze in gallon baggies, they defrost during the morning in the kids lunch boxes.

2 1/2 cups flour
1/2 cup Cocoa
2 1/2 teaspoons Baking Powder
1 1/2 teaspoons Baking Soda
1/2 teaspoons salt
1 teaspoons cinnamon
3/4 cup butted softened
2 cups sugar
3 eggs
1/2 cup milk
2 teaspoons vanilla
2 cups Zucchini grated

Sift together dry ingredients
Cream the butter and sugar, add the eggs and remaining "wet" ingredients.
Stir in dry ingredients.

Batter in two greased pans ...
Bake at 350 F for 1 hour...makes 2 loaves.

CHOCOLATE GLAZE

Ingredients:

* 3/4 cup semisweet chocolate chips
* 3 tablespoons butter
* 1 tablespoon light corn syrup
* 1/4 teaspoon vanilla extract

Directions

1. In a double boiler over hot, but not boiling water, combine chocolate chips, butter and corn syrup. Stir until chips are melted and mixture is smooth, then add vanilla.
2. Dip muffins in warm glaze and swirl in the bowl upside down, place right
side up and allow glaze to dry before storing.

Sweet Green Chili Enchilada's


Super YUMMY AND SUPER EASY! Just use the Bajio Chicken as the filling with a lil' added Monterrey Jack cheese...
So I have always been curious about the Green Store Bought Enchilada Sauce..I am a die hard Rosarita Red Sauce fan...but too cheap to just buy a can and try it out until my friend Corrie brought a can on ova...and let me just say that was a start of a beautiful new recipe..and my kids LOVED em.

You see we use the Bajio Sweet Green Chili Chicken Recipe for Nacho's, Burritos...and well I Generally have a crock-pot going ...or a bag of Sweet Chicken Bliss just waiting in my freezer...

So here ya go...

Use:
Whole Wheat or White Flour Tortilla's
or
Corn Tortilla's ( I think they freeze better)
Shredded Mexican Cheese
Green Encahlada Sauce
a crock pot of Bajio Chicken



fill em' up with the Bajio Chicken
Sprinkle the top with cheese
(Stick a small slice of Cream Cheese (if you have some) on top
rolle em' up
Put them them in a pan with Green Enchilada sauce half an inch poured in bottom.
Fill up the pan with rolled friends until full...cover with the green stuff again.

Sprinkle cheese over the whole sha-bang .
and...Bake at 350 for half an hour...

Frozen Hot Cocoa~ EASY!






So here's the thing...I am one of those people that HAVE to have something sweet after dinner, it can even be a plate of fruit...or a dish of yogurt, lets be honest if it is Chocolate in one form or another...this girl is soo much happier! I saw a post for this recipe back in Novemberish ...right Kimber?...any-who, made it loved it...stored it away for warmer sunnier days...I am giving you the faster , less fat filled version...and then the slower creamier, more guilt-filled but sooo worth it version....

Here goes...equal parts of Fat Free Milk (or water)& Ice and some Hot Cocoa Mix....and walah....

My blender for optimal servings, and no explosion is (P.S. I do have a quote in my kitchen that says " Having a lot of Children is like owning a Blender with out a lid") ...not kidding.
Have fun ...and the short people can even make this dandie!

3 cups milk
3 cups Ice
1 2/3 cups Cocoa mix...

blend it , drink it , love it.
Later I will add a homemade version of Cocoa mix....

Sooo here at the bottom is the one you make your hubbie....and yourself AFTER the kiddies are in bed...or after dinner with BIG people...(I faintly remember those days)....bottoms up!


3 tablespoons superfine granulated sugar (or baking sugar)
1 envelope (2 to 3 tablespoons) Double Chocolate Meltdown, Rich Chocolate or Milk Chocolate Flavor NESTLÉ Hot Cocoa Mix
2 tablespoons unsalted butter
1/3 cup each NESTLÉ TOLL HOUSE Semi-Sweet Chocolate Morsels and NESTLÉ TOLL HOUSE Milk Chocolate Morsels
1 can (12 fluid ounces) NESTLÉ® CARNATION® Evaporated Milk, divided
4 cups ice cubes
Whipped cream

Breakfast Burritoes FREEZABLE!!!!





SOOO EASY...SOOO GOOD, great for mornings on the go...or to have in the freezer to zap up for guests! I got the idea from allrecipes.com...and then switched it up a bit...

Ingredients (you can pretty much use anything breakfasty so play around and find your fav combo)In these bad boys I used eggs, bacon, sausage, Monterrey Jack Cheese, Black Beans and Costco Organic Salsa...(P.S. I bake my bacon on foil covered cookie sheets @ 400 degrees for 20+ minutes until it is crispy and then drain the fat on paper towels).

* 12 eggs, beaten w/ added cold water and scrambled
* 1 lb bulk sausage, cooked (or crumbled links)
* chunky salsa (your choice of heat)
* 2 cups Monterrey jack shredded
* 24 flour tortillas (you can also use whole wheat)

Optional Ingredients
* bacon cooked and crumbled
* drained black beans
* 1 green pepper, finely diced (optional)
* 6 potatoes, shredded and fried until cooked through (optional) or hash browns (optional)
* jalapenos, slices (optional)

* 1 (4 ounce) can chopped green chilies (optional)
* 1-2 garlic cloves, finely minced (optional)
* 1 onion, finely diced (optional)
* 1 tomato, peeled and chopped (optional)
* 2 green onions, sliced with tops (optional)

Directions

Scramble eggs in large skillet until done.

Warm tortillas in microwave 20-30 seconds or until warm and flexible.

Place 1/3 or a lil' more cup egg mixture into tortilla; roll burrito-style.
Sprinkle cheese and layer other ingredients.

Freeze burritos in single layer on lightly greased cookie sheet.

When fully frozen, wrap burritos individually; place wrapped burritos in large zip-top freezer bags; freeze.

TO SERVE: Unwrap burritos from foil or plastic wrap that you used for freezing.

Wrap in a paper towel.

Cook in microwave until heated through (about 2 minutes).

Or thaw burritos (remove plastic wrap if used in freezing), wrap burritos in foil, and bake at 350 degrees for ten minutes.

I doubled this recipe and have 48 gorgeous burritos all nestled happily together in my freezer...

Pepperoni Rolls




My kids get to give me their birthday menu, this means all foods , Breakfast , Lunch and Dinner and beverages and desert for their Birthday...My GORGEOUS daughter Madalyn wanted these bad-lil-darlin's for her B-day Lunch...and YES my kids blow out candles at every meal...I'm REALLY glad they were born ...so sue me.

These will change your universe...they did mine...and all to the genius of my friend Diane and and her DH Steven! Mad props you two!
I make these by the truck load, take them to neighbors, visit teaching, add them to dinners...or (drum roll) PERFECT for lunches...which makes ME HAPPY to once again have a fabulous pre-made lunch option!

Here's the Dough...again just my EASY Bread/Roll Dough I use for EVERYTHING ( Joette your the bomb)

BREAD
10-12 cups Flour ( depending on my mood I use white, wheat or half and half)
1/2 cup sugar
5 Cups warm water
1 cup dry milk
1 cube melted
1 Table spoon salt
3 TBsp Dry FAST acting yeast (Not just active yeast but fast acting)

In Bread Mixing Machine Add water, Milk, & Melted butter & 5 cups flour Mix for one minute....allow to be on lowest setting as you add1 cup flour, Salt, & Yeast. Scrape side of Mixer and mix a little longer.Then while the mixer is on slowly begin adding cups of Flour. Usually I end up adding between 5 to six cups.Once the the dough is all completely pulled away from the mixing bowl you don't need anymore flour. Put lid on Mixer and mix on speed number two for 4 minutes.Once it is finished I cover the counter top with oil, If I am making regular bread I use Veggie oil, if I am making peperoni rolls and Focacia i use Olive oil.

I remove the Dough and knead it on the counter. What ever dough I am using a rework it on the counter top for a couple of minutes. I separate the Dough and what I am not using I cover with a hot damp dish towel.


Toppings:
Olive Oil
Garlic Salt
Italian Seasoning
Peperoni
Shredded Mozzarella


I do the same thing for pepperoni rolls except I don't use butter , just a little extra olive oil, Garlic salt, Italian Seasoning (basil, Rosemary, Parsley), Shredded Mozzarella, Parmesan & Peperoni.
I use a third of the dough at a time, roll it out cover it in then I rub it into the dough with palms of my hands.I cut the dough in half with a pizza cutter and roll the fourths into cylinders and cut them into one to one and one half inch rolls with dental floss.About 28-30 on a cookie sheet.
Cook at 350 for 20-25 minutes

I also make mini-versions in whole wheat and freeze em -in Gallon Bags to defrost on the counter or microwave.
Dip em in Marinara Sauce....

Try the Hawaiian Version...with a lil' Sauce, instead of Olive Oil, Canadian Bacon, Mozzarella, and crushed Pineapple...you'll thank me!

Cinnamon Rolls



I am continuing on the Bake em up, "eat-em-or-freeze-em-for-later" kick....because it makes MY LIFE easier!!!
So onto these SCRUMPTIOUS Cinnamon rolls and then ten minutes later I'm gonna turn em into Peperoni rolls thanks to the genius that is my friend Diane!

You need a GOOD easy Dough...this one is Ode to my bud Joette and her mad bread making skills! I owe this bad boy to her...cause I use it for almost ALL of my bread, roll...carb-addic needs.

Here's the Dough: again half and half wheat to white...or find a GOOD Protein fortified white flour (it just makes me feel better about myself):
BREAD

Cream Cheese Frosting
Double or triple this too.
1 package 8 oz cream cheese ~ softened
¼ cup butter ~ softened
2 to 3 Tablespoons milk
1 teaspoon vanilla
4 cups powdered sugar

Cream wet ingredients ….with mixer on slowly add powdered sugar….

Serve warm , cold...standing on your head...they are just PLAIN GOOOOD!
I also make mini-versions in whole wheat and freeze em -in Gallon Bags to defrost on the counter or microwave.

Homemade Ham and Cheese Hot-Pockets....




Due to the intense amount of "Hot-Pockets JOKES" that go between our family I do have to post this Youtube link : HOT POCKETS.
But these are the OPPOSITE of every joke...they are very good, healthy and YUMMY!
Thanks to the our best bite gals, I have one more freezable, microwaveable lunch solution!
The only changes I made was, changing the flour to half white, half wheat....and stretched the dough to make twelve per batch...and shaped them a lil' different...so here are the pics and the recipe changed up a bit...
I *try* to use whole wheat flour as often as I can, I feel better about my kids eating bread, if it has whole grains...so most my bread have at least Half white wheat flour/ half white flour.

The Dough:
Pizza Dough
Recipe from OurBestBites.com/changed up a tad by me...
(I quadrupled this and made 64 Hot-Pockets)

1 1/2 c. warm (105-115 degrees) water
1 Tbsp. sugar
1 Tbsp. yeast ( I use Saf-Instant Yeast)
1/2 tsp. salt
3-4 1/2 c. flour ( half and Half Flour)


In a large bowl (the bowl of your mixer, if you have one), combine water, sugar, and yeast. Let stand for 10 minutes or until yeast is bubbly/ or use the Saf-Instant Yeast...and no worries about waiting.

Add salt and stir. Add 1 1/2 c. flour and mix well. Gradually add more flour (usually between 3-4 cups, depending on your elevation and your humidity) until dough starts to pull away from the sides of the bowl and it barely sticks to your finger.

Spray a glass or metal bowl with cooking spray and place dough in the bowl. Cover and allow to rise for 45 minutes or until doubled in bulk/ since I quadrupled the recipe...I just let it rise on my counter top.


Prepare dough through the first rise. After dough has risen the first time, turn it out onto a lightly oiled surface and roll into a rectangle, probably about 16x8 inches big (16 inches long, 8 inches tall). ( If you are doubling or more the recipe , work with it in batches and keep the rest of the dough covered by a warm/damp cloth)
Using a pizza cutter, cut dough into 8/12 equal portions.
Leaving a little bit of a "margin" on the right and left sides, add toppings with the cheese going on last. I used 3/4 slices of ham..and 1/4 cup cheese)

Stretch the dough out a little to give yourself a bit more dough to work with. Fold the left side over the middle and then the right side over that. Make sure you're getting a tight seal. Place them seal down on a greased cookie sheet.

When finished, cover the pan with a clean cloth and preheat your oven to 425 degrees F.
When oven has heated, bake pockets for about 15 minutes or until golden brown on top. For shine, you could brush the tops with a bit of egg white mixed with water during the last 5 minutes of baking, or you could rub a little butter on top of the rolls while they're still hot.
Eat right away...save them in a freezer bag, great for a bagged lunch ...or FREEZE EM!

FREEZER INSTRUCTIONS:
Bake according to directions and allow to cool. Place in a Ziploc freezer bag, squeezing out all the air. When ready to serve, just pop in the microwave for 2-3 minutes (depending on how fast your microwave cooks).

CHICKEN CHEESE SOUP

Dinner brought to us after our son passed away by my dear friend Janice.
It was sooo YUMMY...and I have not had it since ...so I went searching and found the recipe she used on line at: www.cooks.com
OK here's the thing....YES it does have Cheez Whiz in it...which I had NEVER used or desired to eat UNITL I munched this soup....so I say Cheez Whiz it is....cause this is SOUPER YUMMY!!!!!

CHICKEN CHEESE SOUP

2 chicken breasts (4 halves or 2 whole)
Water to cover
2/3 c. chopped onion
2/3 c. chopped celery
1/3 c. chopped green onion
2 cans cream of chicken soup
1/2 to 3/4 c. milk
1 lg. jar Cheese Whiz
3 oz. grated sharp cheddar
1/8 tsp. cayenne pepper
1 c. cup Noodles ( I use Country Pasta....they taste homemade)
Salt & pepper

Boil chicken (45 minutes). Chop into bite-size pieces. Boil down broth to 2 cups. Add onion, celery and cook in broth until tender (crisp). Gradually add soup, milk, cheese, chicken. Stir until melts.
Bring Soup to soft boil on med heat...and add noodles....if you are going to Freeze this DO NOT add Noodles!!!

Ham, Potato & Bacon Soup


Ingredients
• 3 1/2 cups peeled and diced potatoes
• 1/3 cup diced celery
• 1/3 cup finely chopped onion
• 3/4 cup diced cooked ham
• 2/3 cup crumbled bacon ( I bake this on a cookie sheet)
• 3 1/4 cups water
• 2 tablespoons chicken bouillon granules ( I like Chicken Broth)
• 1/2 teaspoon salt, or to taste
• 1 teaspoon ground white or black pepper, or to taste
• 5 tablespoons butter
• 5 tablespoons all-purpose flour
• 2 cups milk
Directions
1. Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.
2. In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
3. Stir the milk mixture into the stockpot, and cook soup until heated through, add bacon. Serve immediately.

Glazed Spiced Pumpkin Bars ~healthy

Found these one Fiber One Recipe's....we make these when we all need a lil' more fiber in our diet (If ya'll know what I mean)

Ingredients:
2 cups Fiber One® original bran cereal
1/2 cup canola or vegetable oil
1/2 cup orange juice
1 can (15 oz) pumpkin (not pumpkin pie mix)
2 eggs
1 1/2 cups Gold Medal® all-purpose flour
1 1/2 cups granulated sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon ground ginger
1/4 teaspoon salt
1 cup chopped walnuts
Glaze
1 cup powdered sugar
4 to 6 teaspoons orange juice

Directions:
Heat oven to 350°F. Spray 15x10x1-inch pan with cooking spray, or grease and flour pan. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
In large bowl, beat oil, 1/2 cup orange juice, the pumpkin and eggs with electric mixer on low speed until well blended. Stir in crushed cereal; let stand 10 minutes.
Beat in remaining bar ingredients except walnuts on low speed until well blended. Stir in walnuts. Spread evenly in pan.
Bake 35 to 40 minutes or until top springs back when touched lightly in center. Cool completely, about 1 hour.
In small bowl, mix powdered sugar and enough of the 4 to 6 teaspoons orange juice for desired drizzling consistency. Drizzle over bars. For bars, cut into 8 rows by 4 rows.

Ingredients:

· 1 3/4 cups whole wheat flour or Pamela's Gluten Free bread and baking mix

· 1 teaspoon baking soda

· 3/4 teaspoon salt

. 3/4 teaspoon cinnamon

· 1 3/4 cups packed brown sugar

· 1 cup (2 sticks) butter or margarine, softened *or* 1 cup coconut oil

· 2 large eggs

· 2 tablespoons milk *or* 2 Tablespoons Soy Milk

· 2 teaspoons vanilla extract

· 2 1/2 cups quick or old-fashioned oats

· 1 cup Semi-Sweet or Dark Chocolate Chocolate Morsels

· 1cup Raisins

Directions:
PREHEAT oven to 375° F.

COMBINE flour, baking soda and salt in small bowl. Beat brown sugar, butter and granulated sugar in large mixer bowl until creamy. Beat in eggs, milk and vanilla extract. Gradually beat in flour mixture. Stir in oats, morsels and nuts; mix well. Drop by rounded tablespoon onto greased baking sheets.

BAKE for 9 to 10 minutes for chewy cookies or 12 to 13 minutes for crispy cookies. Cool on baking sheets for 1 minute; remove to wire racks to cool completely.

Haitian Flag Day ~Haitian Soup Jumou~

I make this soup every New Years Day for Haitian Independence Day...


I ALWAYS make too much. So I freeze the leftovers for a rainy or snowy day.
Today for Haitian flag day was the perfect day to bust out the Pumpkin Soup...ALL of my kids eat it up!

Here is the history behind the soup:

Pumpkin Soup, a symbol of Haitian Independence and Unity

Every January 1st, most of us around the world are celebrating the New Year's Day. For Haitians though, the first day of the year has added significance, since it doubles as the anniversary of their independence in 1804. On that day, Haitians whether in Haiti or abroad savor pumpkin soup (soup joumou in Kreyol), in keeping with the tradition to celebrate that event. Having this delicious soup on January 1st is rooted deep in Haitians
culture and history. It is a statement.
During slavery, only the French colonists could drink this delicious and aromatic meal on special occasions while slaves were to drink simple bread soup. At the same time, it was a common saying during slavery that "Depi nan Guinen nèg rayi nèg", meaning that Black people have been hating each other ever since they were back in [Guinea] Africa. On January 1st 1804, during the Independence celebration, a huge pot of pumpkin soup was concocted, and every one present was served a bowl to show that we as descendants of slaves could unite and produce something extraordinary.
So every time we drink this soup on January 1st it reminds us of the injustices of slavery and Haitians having overcoming them. It is a declaration that never, as long as this nation exists will they suffer domination under any form, whether physically or ideologically. The one hundred ninety six years of Haitian independence have thus often if not always been one hundred ninety six years of resistance against oppression and domination. Eating pumpkin soup is thus reminding us that the fight is not over. It also gives us courage, for it is a symbol that there is victory for us at the end of the road.

Ingredients: (this how I Lindsay make it every year, (some recipes differ)

1 lb cut stew meat in cubes
1 Tbsp Flour
4 medium Sweet Potatoes peeled and cubed
3 carrots peeled and chopped
½ head of cabbage cut up
1 med chopped white onion
2Tbsp Minced Garlic
2 cups Chicken Broth or @cups water with 8 bouillon cubes
2 cups or one can Libby’s (or any brand) canned unsweetened Pumpkin
¼ tsp. Thyme
Salt to taste






Directions:
In large pot Boil, potatoes half the Onion, and Cabbage in 6 cups of water.
Reserve water after draining Potatoes and other Veggies.
Dip cubed beef in flour and salt mixture (I use garlic salt) …fry beef in heated skillet with garlic and onions, until browned.
Again in Large pot add 3 cups of reserved water, chicken broth, beef and onions, canned pumpkin, and remaining ingredients. Salt to taste.
Simmer on low for up to two hours.
If soup is too thick add extra reserved water as needed.

2 med chopped white onion
2Tbsp Minced Garlic or a TON like I put in
2 cups or one can Libby’s (or any brand) canned unsweetened Pumpkin
¼ tsp. Thyme
Salt to taste

Directions:
In large pot Boil, potatoes half the Onion, and Cabbage in 6 cups of water.
Reserve water after draining Potatoes and other Veggies.
Saute Onions in heated skillet with garlic until transparent.
Again in Large pot add 5-6 cups of reserved water, onions, canned pumpkin, and remaining ingredients. Salt to taste.
Simmer on low for up to two hours.
If soup is too thick add extra reserved water as needed.

Chicken Alfredo Ravioli EASY (Double & Freeze)

RECIPE FOR 3 Qt. Pyrex Glass Pan

Ingredients

  • 2 package frozen cheese tortellini (found in Freezer section)
  • 2 cups cup up cooked chicken ( pre-grilled chicken is used here)
  • 2 jars (1 lb.) Ragu ® Cheesy! Roasted Garlic Parmesan Sauce
  • Garlic Salt to Taste
  • 2 cups Mozzarella Cheese
  • Parmesan to Sprinkle

Directions:

In 3-quart saucepan, cook tortellini according to package directions. Drain, and to a 3Qt. Pyrex Glass pan.
Pour Ragu Sauce in and mix in...add garlic salt if desired. Sprinkle with Cheeses...and bake at 350 for 30 minutes....
my kids GOBBLE this up.
* You could also add broccoli florets if you wanted to get a little more green into this dish!
